Late summer at the table: 5 simple ideas to get back into the September routine

There are times of the year when change is felt even before it appears on the calendar.

At the end of August, the days are still bright and warm, but the evening arrives with a different air. Holidays are ending, daily routines are starting up again, commitments return and, almost without noticing, the way we want to eat also changes.

It's not autumn yet. But it's not the height of summer anymore either.

It's that brief transition when we continue to look for simple dishes, but start to crave something warmer, more comforting, and inviting.

For me, it's one of the best times to cook, precisely because there's no need to overcomplicate anything.

Just a few well-chosen ingredients and some ideas to help us bring order back to our daily meals.

Here are five simple ways to bring the end of summer to your table.

1. Warm bruschetta with friggione and Parmigiano Reggiano

Some dishes can make a dinner with very little effort.

Good rustic bread, lightly toasted, warm friggione, and a sprinkle of Parmigiano Reggiano.

The contrast between the crunchy bread and the softness of the onions and tomato makes this bruschetta simple yet complete.

It can be an appetizer, a light dinner, or something to place in the center of the table and share.

It's also one of those dishes that perfectly illustrates the cooking I love: recognizable ingredients, familiar flavors, and no unnecessary steps.

2. Egg pasta with a simple sauce

When time becomes scarce again, the temptation is to think that eating well necessarily requires more organization.

In reality, often the opposite is true.

Good egg pasta can be the base for a dish ready in just a few minutes.

A simple sauce, a knob of butter, some Parmigiano Reggiano, or a carefully prepared ready-made sauce can be enough.

The point is not to add a lot.

It's to choose well.

One of the rules I try to follow in everyday cooking is this: when an ingredient already has a distinct flavor, you shouldn't mask it.

Simplicity, in cooking, doesn't mean sacrificing taste. It means leaving space for what's already there.

3. Crispy polenta with friggione

Polenta immediately brings autumn and winter to mind, but in its crispy version, it can also be perfect for this transitional period.

Prepare the polenta, let it cool, then cut it into slices or small rectangles.

Just bake it in the oven or on a griddle until it has a golden and slightly crispy surface.

On top, a spoonful of warm friggione and, if you like, a few flakes of Parmigiano Reggiano.

It's also a simple idea for an aperitivo or an informal dinner.

And most importantly, it has an advantage: it can be prepared in advance.

When days start to fill up with commitments again, having something ready to finish at the last minute makes everything easier.

4. A platter for those evenings when we don't feel like cooking

There are evenings when the best solution is to cook almost nothing.

Good bread, some cheese, vegetables, a sauce, something in oil, and maybe some seasonal fruit can make a complete dinner.

There's no need to even arrange a perfect platter.

In fact, I prefer it when things are simply placed in the center of the table and everyone takes what they prefer.

It's a very convivial and very Italian way of eating: you taste, you share, you converse.

And most importantly, it doesn't require hours at the stove.

For me, this is also eating well.

5. A simple dessert to put at the center of the table

You don't have to wait for Sunday or a special occasion to end dinner with something sweet.

A slice of tart, a raviola, or a small traditional dessert can be enough.

I like the idea of the dessert placed in the center of the table, to be cut or divided.

Perhaps because it immediately makes the moment less rushed.

It reminds us that a meal is not just something to finish before moving on to the next thing.

Sometimes five extra minutes around the table completely change a normal evening.

The end of summer doesn't demand grand recipes

During this period, I don't yet feel the need for rich autumn dishes.

I prefer to slowly accompany the change.

Continue to use summer ingredients, but add something warm.

Prepare simple dishes, but return to the table with a little more calm.

Restart everyday habits without turning cooking into another commitment to organize.

Because eating well doesn't necessarily mean cooking elaborate dishes.

Sometimes it's enough to have something good in the pantry, a piece of bread, a pasta we like, and a simple idea to start from.
