You will walk through the hills of Savigno with our trained Lagotto Romagnolo dogs and an expert guide. You'll learn how truffles grow, what conditions they require, how dogs are trained to find them — and with a bit of luck, you'll be there at the moment of discovery.
2. Cooking class: handmade fresh pasta with truffle seasoning
In the kitchen, you'll learn the art of Bolognese fresh pasta — sfoglia, rolling pin, hands in the flour — as it has been handed down for generations in Emilia-Romagna. And once the pasta is ready, you'll dress it with truffle: white or black depending on the season, prepared simply to highlight its aroma.
3. Truffle-based lunch at the table
The day ends where all good things in Italy end — at the table. A lunch built around truffles, featuring dishes prepared during the cooking class and other local specialties. A meal that tastes of the place it comes from.
White truffle, black truffle: what to expect by season
One of the most frequent questions is: what truffle will I find? The answer depends on when you visit. Savigno's white truffle — Italy's most prized variety — is found between October and December. Black truffle, equally delicious and more versatile in cooking, is available for most of the year.
