Vellutata di Zucca e Patate con Salsa Reale al Tartufo

Cream of Pumpkin and Potato Soup with Royal Truffle Sauce

Ingredients (for 4 servings):

600 g pumpkin (Delica or Violina variety)

300 g potatoes

1 white onion or 1 shallot (milder)

1 liter vegetable broth

2 tablespoons extra virgin olive oil

salt and black pepper to taste

4 teaspoons Royal Truffle Sauce Lina Sapori e Delizie

toasted bread croutons for garnish

Preparation:

1. Prepare the vegetables: Clean the pumpkin, remove the skin, seeds, and strings, then cut it into cubes. Peel the potatoes and cut them into cubes. Finely chop the onion or shallot.

2. Sauté: In a large pot, heat the extra virgin olive oil. Add the chopped onion and let it sauté over low heat for a few minutes until soft and translucent.

3. Cook the soup: Add the pumpkin and potato cubes to the pot. Mix well and let them flavor for about 5 minutes. Pour in the vegetable broth until all the vegetables are covered, season with salt and pepper, and bring to a boil.

4. Blend: Reduce the heat, cover the pot, and let it simmer for 20-25 minutes, or until the vegetables are very tender. Turn off the heat and blend everything with an immersion blender until you get a smooth and homogeneous cream. If the soup is too thick, you can add a little more broth.

5. The finishing touch: Serve the cream soup hot in individual bowls. In the center of each portion, place a teaspoon of Royal Truffle Sauce Lina Sapori e Delizie. Gently mix the sauce into the dish before tasting.

6. Garnish: Complete the dish with crispy toasted bread croutons.

Tips:

This soup is a perfect comfort food that combines simplicity and luxury. Here are some tips not only to enjoy a delicious dish but also to have all the tools to personalize it.

- Prepare in advance: The cream soup is perfect for preparing in advance. You can cook it and store it in the refrigerator for 2-3 days, or freeze it. Remember, however, to add the Royal Truffle Sauce Lina Sapori e Delizie only when serving, to preserve its aroma and flavor.

- Creative variations: For an extra burst of flavor, you can add a small piece of grated fresh ginger or a sprinkle of curry powder while cooking the vegetables. For a touch of sweetness, you can garnish the soup with small crumbled amaretti pieces.

- The perfect pairing: This cream soup pairs wonderfully with a fresh and aromatic white wine such as a Pinot Grigio or a Vermentino. If you're looking for a bolder pairing, you can opt for a sparkling wine (contact us for personalized advice).
