Ingredients (for 4 servings):
600 g pumpkin (Delica or Violina variety)
300 g potatoes
1 white onion or 1 shallot (milder)
1 liter vegetable broth
2 tablespoons extra virgin olive oil
salt and black pepper to taste

Preparation:
1. Prepare the vegetables: Clean the pumpkin, remove the skin, seeds, and strings, then cut it into cubes. Peel the potatoes and cut them into cubes. Finely chop the onion or shallot.
