Beef fillet with royal sauce

Ingredients (for 4 people):

  • 4 beef fillets (about 200g each)
  • 2 tablespoons of extra virgin olive oil (or Lina Sapori e Delizie white truffle olive oil )
  • 50 g of Lina Sapori e Delizie truffle butter
  • qb coarse salt
  • pepper to taste (optional)

For the sauce:

  • 100 g of Lina Sapori e Delizie royal sauce
  • 200 ml of fresh cooking cream
  • 20 g of Lina Sapori e Delizie truffle butter
  • 30 g of grated Parmigiano Reggiano
  • pepper to taste (optional)

To garnish:

  • fresh truffle shavings (optional, for an extra-luxurious touch)

Preparation:

  1. In a non-stick pan, melt the truffle butter over low heat
  2. Pour in the fresh cream and whisk to combine. Bring to a gentle boil.
  3. Add the royal sauce and Parmigiano Reggiano. Mix well until smooth.
  4. if you like, add pepper and keep the sauce warm over very low heat;

thread

  1. Take the fillets out of the refrigerator at least 30 minutes before cooking to bring them to room temperature
  2. In a large skillet, heat the white truffle extra virgin olive oil and truffle butter over medium-high heat until they begin to sizzle.
  3. Season the fillets with coarse salt and pepper, then place them in the pan
  4. Cook for about 3-4 minutes per side for rare, or 5-6 minutes per side for medium.
  5. While cooking, tilt the pan slightly and, using a spoon, baste them with melted butter to keep them juicy.
  6. once cooked, transfer them to a plate and cover them with aluminum foil to let them rest for 5 minutes;

assembly

  1. arrange the fillets on serving plates
  2. pour a generous spoonful of hot sauce over each fillet
  3. If you want an extra touch, add a few flakes of fresh truffle.
