Tasting spoons with red sauce and whipped ricotta

Ingredients (for 12 spoons)

  • 6 teaspoons of Lina's artisanal red sauce Lina Sapori e Delizie
  • 150g of fresh ricotta (preferably cow's milk and creamy)
  • 1 teaspoon of truffle oil Lina sapori e delizie
  • Salt and pepper to taste
  • Thyme sprigs or fresh oregano for garnish (optional)

Preparation

  1. In a bowl, whisk or use an immersion blender to process the ricotta until light and airy.
  2. add a pinch of salt, a grind of pepper, and a drizzle of truffle oil Lina Sapori e Delizie to make it smooth and fragrant
  3. spoon a teaspoon of Lina's artisanal red sauce Lina Sapori e Delizie into the bottom of each tasting spoon
  4. top with a small amount of whipped ricotta
  5. garnish with a thyme sprig or a drop of truffle oil.

Why it works

  • Perfect contrast of flavors: the sweetness of the ricotta enhances the lively and slightly spicy note of the red sauce.
  • Aromatic balance: the truffle oil adds a sophisticated aroma, creating a memorable taste.
  • Visual elegance: served in tasting spoons, they become a small jewel of presentation.

Texture

  • Smooth and full-bodied sauce, with notes of ripe tomato.
  • Whipped ricotta light as a mousse, melting in the mouth.
  • A drizzle of truffle oil that binds and rounds out all the flavors.

Tips and pairings

  • Ideal as an elegant appetizer or starter.
  • They pair perfectly with a glass of Pignoletto Vivace or, for a non-alcoholic version, with the Orange & Truffle Mocktail.
  • You can prepare them in advance and store them in the refrigerator, covered, up to 2 hours before serving.
  • Serve them on a black or slate tray to highlight the color of the sauce and the white ricotta cream.
