The intense scent of the forest, harvested at the perfect moment and carefully preserved to bring all the flavor of the Apennine autumn to your table.
Our Dried Porcini Mushrooms come from the hills between Bologna and Modena, where we harvest them by selecting only the largest specimens. Slow drying concentrates their aroma, resulting in a fragrant, meaty mushroom ready to give character to any dish.
A few minutes of soaking are enough to restore their texture and scent: an ingredient that turns a simple dish into something special.
Why choose them
- Large size, hand-selected from the best specimens harvested.
- Intense aroma, the result of slow and careful drying.
- Harvested in the hills between Bologna and Modena, in full respect of the season.
- Versatile: from tagliatelle to risotto, from meat to side dishes.
- Long shelf life, ready to use whenever you feel like it.
How to use them
Soak the mushrooms in warm water for about 20-30 minutes, until they are soft. Drain them well, keeping the filtered soaking water: it contains a precious aroma that you can add to sauces and risottos to intensify their flavor.
Once rehydrated, you can use them for:
- a creamy and enveloping porcini mushroom risotto;
- a sauce for tagliatelle or other fresh pasta;
- accompanying roasts or braised meats;
- flavoring a soup or a seasonal side dish.

Tagliatelle with Dried Porcini
The traditional recipe: a natural cream obtained by tossing the tagliatelle with the porcini sauce, no cream needed. It also includes three ways to add a touch of truffle.
