Fresh Bianchetto Truffle – The intense scent of tradition

The Bianchetto Truffle , also known as the Marzuolo Truffle , is a prized variety of the White Truffle family, appreciated for its strong taste and its characteristic aroma reminiscent of garlic. It grows spontaneously in the woods and is harvested between January and April, the period in which it reaches maximum ripeness and releases its unmistakable scent.

Unlike the White Truffle, the Bianchetto Truffle is smaller in size and has an irregular shape. Its rind varies from yellow-ochre to reddish brown, while the internal gleba is crossed by light veins that darken with time.

Se il tartufo non va consumato nell’immediato si consiglia di conservarlo con la sua terra di origine, senza pulirlo (Il tartufo va pulito con cura nel momento in cui si intende consumarlo). Conservalo in frigo con qualche foglio di carta assorbente o carta da cucina e inseriscilo dentro a un vasetto di vetro o di plastica provvisto di chiusura ermetica, per poi riporlo in frigorifero a una temperatura compresa tra i 4 e i 5°C. La carta assorbente serve perché il tartufo è per la maggior parte composto da acqua, che verrà assorbita dalla carta ed eviterà la nascita di muffe. Una cosa molto importante: cambiare la carta almeno ogni 2 giorni (anche se ogni giorno sarebbe meglio).
