Crostini with cashew cream with truffle and white truffle oil
Ingredients (for 4 people):
- 8 slices of rustic bread (or baguette)
- 200 g of natural cashews (soaked for 2 hours)
- 2-3 tablespoons of black truffle sauce Lina Sapori e Delizie
- 1 tablespoon nutritional yeast (for a hint of "cheesy" flavor)
- 1 tablespoon lemon juice
- 2-3 tablespoons of water (to adjust the creaminess)
- a drizzle of extra virgin olive oil with white truffle Lina Sapori e Delizi and
- black pepper to taste (optional)
- a few fresh thyme leaves (optional)
Preparation:
for the cashew cream
- Blend the soaked cashews with the nutritional yeast, lemon juice and a little water until you obtain a smooth and velvety cream.
- add a pinch of salt and a drizzle of white truffle oil to intensify the flavour
- Toast the bread: heat the slices of bread in the oven at 180°C for 5-7 minutes or until crispy
- Spread the cashew cream on the croutons
- add a teaspoon of black truffle sauce on each slice
- complete with a drizzle of white truffle oil
- If you like, sprinkle with black pepper and decorate with a few fresh thyme leaves.

- accompany them with a glass of Franciacorta Brut or a mineral Chardonnay, which balance the truffle with freshness and elegance.
