Tuna and Egg Salad with Salsa Verde

Ingredients (for 2 people):

  • 1 crisp lettuce (or mixed salad)
  • 1 can of quality tuna (in oil or natural, drained)
  • 2 hard boiled eggs
  • fresh cherry tomatoes (8-10, cut in half)
  • 1 tablespoon capers
  • black or green olives to taste
  • toasted bread croutons (optional, for a crunchy touch)
  • 2 tablespoons of Lina Lina green sauce flavors and delights
  • extra virgin olive oil, salt and pepper to taste

Preparation:

  1. Cook the eggs for about 9-10 minutes in boiling water, then cool them under running water, shell them and cut them into wedges
  2. wash and dry the lettuce, then place it in a large bowl
  3. add the ingredients: combine the drained tuna, the cherry tomatoes, the capers and the olives
  4. mix Lina's green sauce with a drizzle of extra virgin olive oil and a pinch of pepper
  5. Pour the dressing over the salad and mix gently to distribute the flavor well.
  6. add the hard boiled eggs and, if you like, some croutons for a crunchy touch.
