Salmon Tartare with White Truffle Oil with Dried Truffle

Ingredients

3 slices fresh salmon

2 slices smoked salmon

Modena PGI balsamic vinegar pearls with white truffle Lina Sapori e Delizie

1 avocado

1 shallot

extra virgin olive oil with white truffle and dried truffle Lina Sapori e Delizie

a few sprigs of dill

juice of half a lemon

Preparation

  1. cut the fresh salmon and smoked salmon into cubes
  2. peel and finely chop the shallot
  3. mix the shallot with the salmon
  4. halve and pit the avocado
  5. sprinkle the avocado slices with lemon juice
  6. place a pastry ring on the plate and arrange the avocado slices inside it
  7. cover with the shallot and salmon
  8. press the tartare with the back of a spoon
  9. repeat the same operation for each plate
  10. keep the salmon tartare in the refrigerator until ready to eat
  11. unmold just before serving
  12. serve cold and garnished with sprigs of dill
  13. dress with our truffle oil and Modena PGI balsamic vinegar pearls with white truffle.
