Salmon Tartare with White Truffle Oil with Dried Truffle

Ingredients
3 slices fresh salmon
2 slices smoked salmon
Modena PGI balsamic vinegar pearls with white truffle Lina Sapori e Delizie
1 avocado
1 shallot
extra virgin olive oil with white truffle and dried truffle Lina Sapori e Delizie
a few sprigs of dill
juice of half a lemon
Preparation
- cut the fresh salmon and smoked salmon into cubes
- peel and finely chop the shallot
- mix the shallot with the salmon
- halve and pit the avocado
- sprinkle the avocado slices with lemon juice
- place a pastry ring on the plate and arrange the avocado slices inside it
- cover with the shallot and salmon
- press the tartare with the back of a spoon
- repeat the same operation for each plate
- keep the salmon tartare in the refrigerator until ready to eat
- unmold just before serving
- serve cold and garnished with sprigs of dill
- dress with our truffle oil and Modena PGI balsamic vinegar pearls with white truffle.
