Ricotta Tart with Strawberry Compote
Ingredients for the shortcrust pastry:
- 300 g of 00 flour
- 150 g of butter
- 100 g of sugar
- 1 egg
- 1 pinch of salt
Ingredients for the filling:
- 500 g of cow ricotta
- 100 g of sugar
- 2 eggs
- grated lemon zest

Preparation:
- knead the flour with the cold butter cut into pieces, the sugar, the egg and the salt, until you obtain a smooth dough
- Wrap the dough in cling film and let it rest in the fridge for at least 30 minutes
- Meanwhile, in a bowl, mix the ricotta with the sugar, eggs and grated lemon zest
- roll out the shortcrust pastry and line a cake tin with it
- Pour the ricotta filling into the cake tin and bake in a preheated oven at 180°C for approximately 40 minutes
