Sweet ravioli with berry compote
Ingredients:
- 400 g of flour (choose the type you prefer, even wholemeal is fine)
- 250 g of sugar
- 100 g of butter (if you prefer not to use butter, use 200 g of oil + 45 g of milk)
- 125 ml milk
- 2 whole eggs
- 1 tablespoon of water
- grated zest of 1 untreated lemon
- 1 sachet of vanilla yeast Lela for 1/2 kg
- 1 or 2 jars of Lina Sapori e Delizie berry compote
Preparation:
- moisten the sugar with 1 tablespoon of water and work it together with the butter (at room temperature) until you obtain a cream
- add the eggs, milk and grated lemon zest
- add the sifted flour little by little together with the yeast from the sachet
- mix everything very well
- form a loaf and flatten it before wrapping it in cling film
- put it in the fridge to let it harden for at least 30 minutes (if you leave it longer it's even better)
- take the dough out of the fridge and place it on a cold, floured surface
- Use a rolling pin to beat the dough to soften it without heating it
- roll out the dough into a sheet about 2-3 mm thick
- using a round cookie cutter (choose the diameter you prefer), cut the dough to obtain lots of little discs
- Knead the excess dough again and repeat steps 9 and 10 until all the dough is used up
- add a little bit of compote to each disc of dough
- close each disk of pasta in half to obtain the classic raviole shape
- Press the edges to prevent the compote from leaking out during cooking
- Place the raviole on a baking tray lined with baking paper (or, if you prefer, butter and flour the tray and place the raviole directly on it), spacing them well apart from each other
- cook in a static oven preheated to 180° until and remove from the oven when the ravioli have a light golden colour
- let it cool in the pan
- Once the ravioli have cooled, remove them from the mould and transfer them to a serving plate.
- Your ravioli with berry compote are ready to be enjoyed!

- To satisfy everyone's tastes, you can fill the ravioli with different flavours of compote
- To decorate the ravioli, you can sprinkle them with icing sugar or a handful of cinnamon powder.
