Sweet ravioli with berry compote

Ingredients:

  • 400g of flour (choose the type you prefer, even wholemeal is fine)
  • 250 g of sugar
  • 100 g of butter (if you prefer not to use butter, use 200 g of oil + 45 g of milk)
  • 125 ml milk
  • 2 whole eggs
  • 1 tablespoon of water
  • grated zest of 1 untreated lemon
  • 1 sachet of vanilla yeast Lela for 1/2 kg
  • 1 or 2 jars of Lina Sapori e Delizie berry compote

Preparation:

  1. moisten the sugar with 1 tablespoon of water and work it together with the butter (at room temperature) until you obtain a cream
  2. add the eggs, milk and grated lemon zest
  3. add the sifted flour little by little together with the yeast from the sachet
  4. mix everything very well
  5. form a loaf and flatten it before wrapping it in cling film
  6. Place it in the refrigerator to firm up for at least 30 minutes (if you leave it longer it's even better)
  7. take the dough out of the refrigerator and place it on a cold, floured surface
  8. beat the dough with a rolling pin to soften it without heating it
  9. roll out the dough to a thickness of about 2-3 mm
  10. using a round cookie cutter (choose the diameter you prefer), cut the dough to obtain many discs
  11. Knead the excess dough again and repeat steps 9 and 10 until all the dough is used up.
  12. add a little of the compote to each disc of dough
  13. Close each disk of pasta in half to obtain the classic ravioli shape
  14. Press the edges to prevent the compote from leaking out during cooking
  15. Place the raviole on a baking tray lined with baking paper (or, if you prefer, butter and flour the tray and place the raviole directly on it), spacing them well apart from each other
  16. Cook in a preheated static oven at 180° until the ravioli are lightly golden in colour.
  17. let it cool in the pan
  18. Once the ravioli have cooled, remove them from the mold and transfer them to a serving plate.
  19. Your ravioli with berry compote are ready to be enjoyed!

  • To decorate the ravioli, you can sprinkle them with icing sugar or a handful of ground cinnamon.
