Polenta with traditional Bolognese ragù

Ingredients:

  • 300 g of corn flour
  • 1.5 l of water
  • a jar of traditional Bolognese ragù Lina Sapori e Delizie
  • Parmesan cheese (optional)
  • qb coarse salt

Preparation:

  1. put a pot with water and salt on the stove
  2. when the water boils, remove the pot from the heat
  3. add the corn flour little by little, stirring to avoid lumps forming
  4. cover the pot and place it on the smallest burner on the hob at minimum heat
  5. let it cook for about 50 minutes - 1 hour
  6. distribute the still hot polenta onto the plates
  7. add the traditional Bolognese ragù Lina Flavors and Delights
  8. Complete, if you like, with a generous sprinkling of Parmigiano Reggiano.

Advice:

  • There are different types of corn flour, choose the one you prefer. Keep in mind that

- Bramata flour is coarsely ground, so choose it if you like a rustic polenta, which requires a little longer cooking times
- Fioretto flour is the finest and from this you get a soft polenta that cooks in about 40 minutes
- wholemeal flour, not being sifted, contains a part of bran which will give you a rustic polenta
- taragna flour is a mixture of corn flour and buckwheat flour from which you will obtain a darker polenta with coarse grain and a strong flavour
  • If you want to obtain a more fluid polenta you can increase the amount of water used as desired.
  • Polenta can be stored in the refrigerator for 2-3 days without any problems. You can reuse it by cutting it into 5 mm thick slices and toasting it over a charcoal grill, if possible, or in a nonstick pan with a drizzle of oil until a nice crust forms on both sides, or by frying it in a pan with hot oil.

    A simple, healthy, and low-calorie dish to enjoy for lunch or dinner, either as an appetizer, served as small, individual polenta dishes, or as a first course or main course. Traditional Bolognese ragù, rich and flavorful, pairs perfectly with corn polenta and I'm sure it will satisfy not only the most refined palates, but also those who, while maintaining a healthy, low-calorie diet, desire a tasty dish.
