Tagliatelle with truffle and white truffle sauce

Ingredients (for 2 people):

• 200 g fresh tagliatelle Lina sapori e delizie (by order) or white truffle tagliatelle Lina sapori e delizie
• 2 tablespoons white truffle sauce Lina sapori e delizie
• 50 g truffle butter Lina sapori e delizie
• 2 tablespoons grated Parmesan cheese
• salt to taste
• black pepper to taste
  

To garnish:

• fresh truffle shavings (optional, for an extra-luxury touch)

Preparation:

1. bring a pot of salted water to a boil and cook the tagliatelle according to the time indicated on the package (2-3 minutes for fresh pasta, 7 minutes for packaged tagliatelle)
2. in the meantime, in a large pan, melt the butter over low heat. When completely melted, add the truffle sauce and stir gently to combine. Add a pinch of black pepper
3. when the tagliatelle are ready, drain them (reserving a cup of cooking water). Transfer them to the pan with the truffle sauce and stir over low heat. If the sauce seems too thick, add a little of the cooking water to make it creamy
4. turn off the heat and stir in the grated Parmesan cheese, continuing to mix. This will give the dish a velvety texture
5. plate the tagliatelle and, if you wish, garnish with some fresh truffle shavings. Add a drizzle of extra virgin olive oil uncooked to enhance the flavor.

Tips:

• pair the dish with a glass of dry white wine, such as a Chardonnay or a Pinot Grigio.
