Tagliatelle with truffle and white truffle sauce
Ingredients (for 2 people):
- 200 g of fresh tagliatelle Lina sapori e delizie (to order) or tagliatelle with white truffle Lina sapori e delizie
- 2 tablespoons of white truffle sauce Lina sapori e delizie
- 50 g of truffle butter Lina flavors and delights
- 2 tablespoons grated Parmigiano Reggiano
- salt to taste
- black pepper to taste
To garnish:
- fresh truffle flakes (optional, for an extra-luxury touch)
Preparation:
- bring a pot of salted water to the boil and cook the tagliatelle following the time indicated on the package (2-3 minutes for fresh pasta, 7 minutes for packaged tagliatelle)
- Meanwhile, in a large skillet, melt the butter over low heat. When it is completely melted, add the truffle sauce and stir gently to combine. Add a pinch of black pepper
- When the tagliatelle are ready, drain them (keeping aside a cup of the cooking water). Transfer them to the pan with the truffle sauce and stir over low heat. If the sauce seems too thick, add a little of the cooking water to make it creamy
- turn off the heat and add the grated parmesan, continuing to mix. This will give the dish a velvety consistency
- Plate the tagliatelle and, if you like, garnish with some fresh truffle flakes. Add a drizzle of raw extra virgin olive oil to enhance the flavor.
Advice:
- pair the dish with a glass of dry white wine, such as a Chardonnay or a Pinot Grigio.
