Tagliatelle with Asparagus and Sausage Ragù

Ingredients:

  • 320 g of fresh traditional Bolognese tagliatelle handmade Lina sapori e delizie
  • 500g of asparagus
  • 200 g of sausage
  • 1 white onion
  • 1 clove of garlic
  • 1/2 glass of dry white wine
  • extra virgin olive oil
  • salt and pepper to taste
  • grated parmesan cheese

Preparation:

  1. Clean the asparagus, removing the hardest part of the stem, and cut them into small pieces
  2. in a pan, fry the chopped onion and garlic with a drizzle of oil
  3. add the crumbled sausage and brown it
  4. blend with the white wine and let it evaporate
  5. add the asparagus, salt and pepper, and cook for about 15 minutes, until the asparagus is tender
  6. cook the tagliatelle in plenty of salted water, drain them al dente and pour them into the pan with the ragù
  7. mix everything together for a few minutes
