Cold rice with truffle

Ingredients:

  • 1 pack of Lina truffle rice flavors and delights
  • light vegetable broth (for cooking)
  • truffle oil Lina sapori e delizie (to intensify the flavour)
  • flakes of Parmigiano Reggiano
  • toasted walnuts or pine nuts
  • cubes of delicate cheese (such as taleggio or primo sale)
  • fresh grated truffle Lina sapori e delzie (if available)
  • salt and pepper to taste

Preparation:

  1. Cook the rice according to the instructions, but drain it slightly al dente
  2. Let it cool completely, spreading it out on a tray and seasoning it with a drizzle of truffle oil to prevent it from sticking together
  3. add the diced cheese, toasted walnuts and parmesan flakes
  4. mix well and leave to rest in the fridge for at least 1 hour to blend the flavours
  5. serve with a sprinkling of fresh truffle and another drizzle of truffle oil.
