Cold rice with truffle
Ingredients:
- 1 pack of Lina truffle rice flavors and delights
- light vegetable broth (for cooking)
- truffle oil Lina sapori e delizie (to intensify the flavour)
- flakes of Parmigiano Reggiano
- toasted walnuts or pine nuts
- cubes of delicate cheese (such as taleggio or primo sale)
- fresh grated truffle Lina sapori e delzie (if available)
- salt and pepper to taste
Preparation:
- Cook the rice according to the instructions, but drain it slightly al dente
- Let it cool completely, spreading it out on a tray and seasoning it with a drizzle of truffle oil to prevent it from sticking together
- add the diced cheese, toasted walnuts and parmesan flakes
- mix well and leave to rest in the fridge for at least 1 hour to blend the flavours
- serve with a sprinkling of fresh truffle and another drizzle of truffle oil.
