Ingredients (for 2 people)
- 200 g of traditional Bolognese tagliatelle from Lina Sapori e Delizie or white truffle tagliatelle from Lina Sapori e Delizie
- 150 g of peas (fresh or frozen)
- 1 tablespoon of extra virgin olive oil
- 1 knob of butter (optional)
- 2 teaspoons of Parmesan sauce with white truffle from Lina Sapori e Delizie or a few drops of white truffle olive oil from Lina Sapori e Delizie
- salt to taste
- Grated Parmigiano Reggiano (optional)
Preparation
- Bring a pot of salted water to a boil and cook the tagliatelle.
- Meanwhile, cook the peas in lightly salted water for a few minutes until they are soft.
- Drain them and blend with a drizzle of extra virgin olive oil until you get a smooth cream.
If needed, add a little cooking water to adjust the consistency. - Pour the cream into a pan, add a small knob of butter (if you like) and heat gently.
- Drain the tagliatelle and sauté them in the pea cream.
- Off the heat, add the Parmesan sauce or a few drops of truffle oil.
👉 This step is important: truffle doesn't like very high temperatures.
How to serve
Serve the tagliatelle hot, with a light sprinkle of Parmesan if desired.
The result is a balanced dish:
- the sweetness of the peas
- the richness of the pasta
- the aroma of truffle that comes through at the end
