Tuna and Egg Salad with Salsa Verde

Ingredients (for 2 people):

  • 1 crunchy lettuce (or mixed greens)
  • 1 can of quality tuna (in oil or natural, drained)
  • 2 hard-boiled eggs
  • fresh cherry tomatoes (8-10, cut in half)
  • 1 tablespoon of capers
  • black or green olives to taste
  • toasted bread croutons (optional, for a crunchy touch)
  • 2 tablespoons of Lina's green sauce Lina sapori e delizie
  • extra virgin olive oil, salt and pepper to taste

Preparation:

  1. cook the eggs for about 9-10 minutes in boiling water, then cool them under running water, peel them and cut them into wedges
  2. wash and dry the lettuce, then place it in a large bowl
  3. add the ingredients: combine the drained tuna, cherry tomatoes, capers and olives
  4. mix Lina's green sauce with a drizzle of extra virgin olive oil and a pinch of pepper
  5. pour the sauce over the salad and mix gently to distribute the flavor evenly
  6. add the hard-boiled eggs and, if you like, some bread croutons for a crunchy touch.
