Sweet ravioli with berry compote

Ingredients:
- 400 g flour (choose your preferred type, whole wheat is also fine)
- 250 g sugar
- 100 g butter (if you prefer not to use butter, use 200 g oil + 45 g milk)
- 125 ml milk
- 2 whole eggs
- 1 tablespoon water
- grated zest of 1 untreated lemon
- 1 sachet of Lela vanilla baking powder for 1/2 kg
- 1 or 2 jars of berry compote
Preparation:
- moisten the sugar with 1 tablespoon of water and work it with the butter (at room temperature) until you get a cream
- add the eggs, milk, and grated lemon zest
- gradually add the flour, sifted with the baking powder from the sachet
- knead everything very well
- form a ball and flatten it before wrapping it in plastic wrap
- place it in the refrigerator to firm up for at least 30 minutes (leaving it longer is even better)
- take the dough ball from the refrigerator and place it on a cold, floured surface
- with a rolling pin, beat the dough ball to soften it without warming it up
- roll out a sheet about 2-3 mm thick
- with a round cookie cutter (choose your preferred diameter), cut the dough to obtain many discs
- knead the excess dough again and repeat steps 9 and 10 until all the dough is used up
- add a little compote to each dough disc
- fold each dough disc in half to obtain the classic raviola shape
- press the edges to prevent the compote from leaking out during cooking
- arrange the raviolas on a baking sheet lined with parchment paper (or, if you prefer, grease and flour the baking sheet and place the raviolas directly on it), spacing them well apart
- bake in a preheated static oven at 180° until the raviolas are lightly golden, then remove from the oven
- let them cool in the baking pan
- when the raviolas have cooled, remove them from the pan and transfer them to a serving plate
- your berry compote raviolas are ready to be enjoyed!
Tips:
- to satisfy everyone's tastes, you can fill the raviolas with different compote flavors
- to decorate the raviolas, you can sprinkle them with powdered sugar or a pinch of ground cinnamon.
