Quince cake with quince compote

Ingredients:

  • 250g all-purpose flour
  • 120g sugar
  • 80g melted butter
  • 2 eggs
  • 1 packet baking powder
  • 2 fresh quinces (grated or diced)
  • 2 tablespoons of quince compote Lina Sapori e Delizie 
  • grated lemon zest
  • icing sugar for decoration

Preparation:

  1. Beat eggs and sugar until light and fluffy.
  2. Add melted butter and lemon zest.
  3. Fold in flour and baking powder.
  4. Stir in quinces and half of the compote.
  5. Pour into a baking tin and bake at 180°C for 40-45 minutes.
  6. Once cooked, brush the surface with a thin layer of compote and dust with icing sugar.
